The sediment in wine is a natural byproduct of the wine making process,  and it may be removed (clarifying) from the unfinished wine prior to bottling by various methods. One option is racking; the sediment falls to the bottom of the container, before the wine on top is pumped into a different container. Racking removes most of the sediment, but not all of it. Another widely used method for clarifying wine is known as fining, and it’s this process, sometimes used in conjunction with racking, that can make a bottle of wine either suitable for vegans or not.\u003c\/p\u003e\n\u003cp\u003eFining agents remove the haziness caused by tiny sediment particles suspended in wine. Wine makers can choose from a range of fining agents, which can be made from products of animal or mineral origin. Fining agents of animal origin are generally egg whites, casein (a protein from milk), gelatine or isinglass (from fish bladders) and obviously, these are not acceptable ingredients in a vegan diet. The alternative mineral derived agents are bentonite clay, or activated charcoal from carbon, amongst others. Great on its own, in an espresso martini, or poured over ice cream, it got a big thumbs up too. \u003c\/em\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003eThe following summer we launched our Peach \u0026amp; Pomelo Liqueur, made with white peach, sweetened with coconut blossom nectar and balanced with the gentle citrus of pomelo. It is perfect with mixers or with sparkling wine as a lazy Bellini. (We discovered later that in Eastern tradition pomelo is the favourite fruit of the Moon Goddess - it was written in the stars!) \u003c\/em\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003eIn 2021 we signed up to 1% For The Planet, committing to give a minimum of 1% of our total sales to environmental non-profits. Then in 2024 we found some great rum in Sri Lanka which blends beautifully with flavours from the region - spiced pineapple, pandan leaves, lemongrass and galangal - to make a fantastic subtly spiced rum. Perfect for simple sundowners, daiquiris with a twist or a juicy Jungle Bird. \u003c\/em\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003eWe have some other ideas in the pipeline which we can't reveal just yet.
