Pale straw in colour with a soft youthful green hue. Aromas of white peach and nectarine compote with lashings of roasted nuts and allspice. On the palate, bright citrus and peach fruit with undertones of roasted cashew. To retain the delicate natural aromas and flavours, select parcels of fruit were crushed and lightly pressed prior to clarification and cool fermentation. Regular lees stirring helped to add texture and finesse to the wine, that was fermented and matured on medium toast in addition to receiving French Oak treatment. Perfect with poultry and seafood dishes. Try with crispy salmon fillets.
