When Alejandro Bulgheroni and his wife, Bettina, discovered Garzón in 1999, they saw in it their “little Uruguayan Tuscany”, and they had a dream, a family dream that has come true today; a premium winery surrounded by olive groves and vineyards..
They employ sustainable energy and agriculture techniques in the wine making process, from energy efficiency to reduction in water consumption, using low-emission local equipment and responsible construction waste management. As well as collecting rainwater they also endeavour to recycle any excess water used during irrigation.
The new winery received grapes for the first time from the 2014 harvest, thus inaugurating the first sustainable winery built outside North America in accordance with the stringent requirements set down by the United States Green Building Council (USGBC). LEED Certification (Leadership in Energy & Environmental Design) is a rating system developed by the USGBC which consists of a set of rules regarding strategic plans aimed at ensuring building sustainability.
This state-of-the-art architecture, built on natural terraces, is designed to allow the wine making process to benefit from a gravity feed system. Add to this the cutting-edge technology and the outstanding technical equipment, and it's easy to see why Garzón produces top quality wines with strong identity and local flavours.
At Bodega Garzón they take care of the grapes right after the harvest and from the very moment the grapes enter the winery. Grape sorting tables and the winery’s special design for the production of wine through racking preserves the integrity and potential of the grapes, which helps their wines to develop and reflect the genuine character of Garzón’s terroir.
The temperature of the fermentation process is controlled by an underfloor climate control system attached to each vat. No external wine additives (such us commercial yeasts or enzymes) are used. Rather, the growth of the native yeasts is encouraged, allowing the wine to ferment naturally.
The fermentation process concludes with careful attention to the floating cap of grape skins. The aim to extract the colour and tannins whilst maintaining a good balance between acidity, flavours and astringency. Choosing ‘live’ containers contributes to the complexity of their wines and they exclusively use un-toasted French oak and concrete vats, as they are the ideal containers for the wine to achieve perfect maturity.
