Chablis as it should be; mineral, fresh and light but with interest and texture. Think flavours of lemon, pea shoot and green apple, it’s got racy acidity but not a hint of bitterness. Aromatic and vibrant, with ample stone fruit, rounded and supple with that essential clean, mineral freshness. Pairs well with pork, rich fish (salmon, tuna etc), shellfish, mild and soft cheese.
Very keenly priced village Chablis from this well regarded domaine, established in 1972 in the village of Lignorelles in the north-west of Chablis, now with 16 hectares run by David Depuydt
