Concentrated aromas of ripe fruits, mocca, cocoa and toffee. Very complex on the palate, with a clean acidity and flavour of raisins, nuts, crystallized orange and candied peel. Ideal with rich cakes, egg based puddings and blue cheeses (Stilton, Gorgonzola) and also as an ideal digestif for the sweet-toothed.
Each individual component of this blend (Oloroso and Pedro Ximenez) is aged in its own Solera. After blending, the wine is further aged for three years in a solera of 33 American oak casks before bottling.
One of the great icons of Lustau. Its aging process mimics that of some 17th century wines developed during transatlantic journeys to distant Spanish colonies. Concentrated aromas of ripe fruit, mocha, cacao and toffee. Flavours of raisins, nuts and candied orange.
To achieve this, after aging separately in their own soleras, the Oloroso and Pedro Ximénez that make up the blend, are combined and undergo a second aging process in a solera of 45 barrels at the Sacristía de Bodegas Lustau, with its elevated humidity and temperatures that replicate the climatic conditions that the wines would have experienced on their journeys.
